The real-world performance difference is tiny for gaming and everyday stuff—maybe 1-3% if both run at the same frequency. But four sticks can be a headache on budget boards or with high-speed DDR5. You might end up stuck at 4800MHz instead of 6000MHz.

If you already have 4x8GB, don’t bother swapping. If you’re building new, just buy 2x16GB. Future you will thank you when you want to drop in another 32GB.
