2x32GB is the better choice.
You want 64GB, and on DDR5 with a Ryzen 9 7950X, two sticks is almost always more stable and faster than four.
Four sticks of DDR5 puts more strain on the memory controller, especially at 6000 MT/s. You might need to drop to 5600 or lower to keep it stable. Two sticks run at rated speeds with less hassle, and you get the same 64GB. The performance difference in real-world tasks is small, but the peace of mind is not.
Unless you’re chasing a specific aesthetic with four dimms filled, save yourself the troubleshooting and go 2x32GB.
