A box fan works for heat, not for fumes
Yes, a box fan can absolutely pull heat out of a kitchen while cooking — but it will not do much for smoke, grease, or cooking odors the way a real range hood does.
Here’s the deal: heat rises, and a box fan pointed out an open window will create negative pressure that pulls hot air out of the room. That works fine. If you’re just boiling pasta or simmering sauce, a box fan in the window is a perfectly good solution for keeping the kitchen from turning into a sauna.
Where it fails is with smoke or airborne grease. Box fans don’t have filters, and they don’t pull air from directly above the stove. So when you sear a steak or fry bacon, the fan will move some of the smoke out, but it won’t capture the grease particles that eventually coat your cabinets. Also, if you’ve got a gas stove, be careful not to position the fan so it blows directly across the burners — that can mess with the flame and spread carbon monoxide around instead of exhausting it.
The real trick is to place the fan in the window (facing out) rather than on the counter blowing toward the window. That way you’re actually exhausting the air, not just pushing hot air around the room. And crack a door or another window on the far side of the kitchen to create a cross-breeze — that’ll make the fan way more effective.
It’s not a hood, but for heat-only problems, it’s a decent hack.
Won’t save you from setting off the smoke alarm, though.
