The browning happens when cut fruit hits oxygen. A 30-second soak in a quarter-teaspoon of salt dissolved in a cup of water stops that without making the apple taste salty. Rinse lightly if you’re worried. Lemon juice works too, but it can leave a tang.
For carrots, celery, and cucumber, the enemy is moisture loss, not oxygen. Pack them in a glass or stainless container with a folded damp paper towel (or a clean cloth napkin) tucked on top or under them. The humidity keeps them snappy until lunch. If you want extra crunch, put a small ice pack under the container.
Skip the baggies entirely: silicone stasher-style bags, glass meal prep containers, or even a bento box with dividers do the job. The key is sealing out air for fruit and trapping moisture for veggies. Same result, less plastic.
