The reason is simple: surface area. A loose ice pack only cools whatever it touches. Built-in gel lines the whole bag, so it wraps around your container and keeps the air inside cold. It also adds a frozen layer between the food and the outside heat. Some bags put the gel in the lid too, but walls are what actually help.

The trade-off is that you have to freeze the entire bag the night before. That takes up real freezer space, and if you forget, you’re stuck with a lukewarm bag. A separate pack can be swapped out or doubled up for a bigger load. But for a normal lunch, the built-in version is more foolproof.
