Electrolysis is the safest way to remove deep rust

Yes, you can strip heavy rust without damaging the original iron surface, but steel wool and sandpaper are not the answer.

The problem with abrasive methods is that they don’t stop at the rust—they eat into the base metal too. If your pan has been neglected for years, the original surface (the smooth, machined finish) is likely still intact under the rust. You want to preserve that, not grind it off.

Electrolysis is the gold standard. It uses a low-voltage current and a solution of washing soda to convert rust back into iron. It removes nothing but the oxidation—the original surface stays untouched. It’s also dead simple: a battery charger, a bucket, a piece of scrap steel (rebar or a steel plate), and some washing soda. If electrolysis feels like too much work, you can use a chemical rust remover like Evapo-Rust. It’s non-toxic, works overnight, and won’t etch the iron. Soak the pan, scrub off the loose gunk with a nylon brush, and you’re done. It’s slower than electrolysis and costs a bit, but it’s nearly as gentle on the surface.
