On the Canadian side, Table Rock House Restaurant does classic pancakes with floor-to-ceiling windows overlooking Horseshoe Falls. The American answer is Top of the Falls Restaurant at Goat Island, perched near the brink of the American Falls. Either side gives you breakfast with a view.
