Cut your potatoes into roughly ¼-inch slices (or cubes, if you’re feeling lazy). Toss them in a bowl with olive oil, salt, pepper, and whatever else you like — garlic powder, rosemary, paprika, it’s all fair game. Don’t be shy with the salt; potatoes are sponges.
Tear off a big piece of heavy-duty foil (or double up regular foil). Dump the potatoes in the center, fold the foil over and crimp the edges into a tight sealed packet. Leave a little air inside for steam. You want a pillow, not a brick.
Preheat your gas grill to medium (around 400°F). Throw the packet on the grates, close the lid, and let it sit for 20 minutes. Flip it once halfway through. Don’t peek — the steam is doing the work. After 20 minutes, poke through the foil with a knife. If it slides in easy, you’re done. If not, give it another 5-10.
Open carefully — steam burns are real. Sprinkle with fresh herbs or cheese if you’re fancy. They’ll forgive you if you forget them for five minutes.
