Frozen burgers: high heat, lid down, thermometer
Yes, you can cook frozen burgers straight on the grill — just follow a few rules and don’t rely on color.
The biggest mistake people make is thawing first. Thawing just turns your patty into a leaky, dry mess. Frozen burgers hold their shape and juices better. Start with a hot grill — 450–500°F. You need that high heat to sear the outside fast before the inside has a chance to dry out.
Keep the lid down. I know it’s tempting to flip every 30 seconds, but closed lid creates an oven effect that helps the center cook without burning the outside. Flip once, around 6–8 minutes. Total cook time is typically 12–16 minutes depending on thickness.
And please, for the love of grilling, use a thermometer. Frozen patties can look brown and charred on the outside while the middle is still raw. Color is not a reliable indicator here. Pull them at 160°F internal temp. That’s the number for ground beef safety, no matter how pink it might look.
A good instant-read thermometer costs less than a bad case of food poisoning.
