Use grapeseed or canola oil. They’re the most reliable for a hard, durable seasoning that won’t flake or get sticky.

Flaxseed oil is the internet darling because it polymerizes into a glass-hard layer. Problem is, glass is brittle. I’ve seen flaxseed seasoning chip and peel under normal use, especially on newer pans. It looks great for a week, then it’s a mess.

Grapeseed and canola hit the sweet spot: high smoke point, polyunsaturated fats that cross-link well, and enough flexibility to handle thermal expansion.
