Grill frozen tuna steaks directly.
Yes, you can grill them straight from the freezer — and you probably should.
Frozen tuna is dense and forgiving. Grilling it straight from frozen means the inside stays rare (which is how tuna should be) while the outside gets a good sear. If you thaw it first, you’re fighting a clock: one minute too long and you’ve got dry, chalky fish. Frozen gives you a wider window.
Just pat the steaks dry first (ice crystals create steam, which kills the sear). Oil the grate, get it screaming hot, and cook about 2–3 minutes per side depending on thickness. Don’t move them until they release easily. Done.
If you prefer your tuna cooked through (which, I mean, you do you), thaw first. But for the rest of us, frozen-to-grill is the move.
This is one case where frozen beats fresh.
