Don’t let them steam in their own moisture.

The trick is direct heat, a hot grill, and flipping once. Asparagus goes from crunchy to stringy if you slow-cook it. Treat them like a steak, not a stew.

Here’s exactly what I do: Snap off the woody ends (they’ll break naturally). Toss in oil, salt, and pepper. Nothing fancy. Throw them perpendicular to the grates so they don’t fall through. High heat – 450–500°F. After 3–4 minutes, roll them over with tongs. You want char marks and slight blistering, not an all-over brown. Total time: 6–8 minutes tops.

The biggest mistake? Crowding the grill. If they overlap, they steam. Steam turns them into sad, limp strings. Leave space. If you’re doing a lot, cook in batches. And don’t bother with foil packets – that’s just boiling with extra steps.

Thicker spears hold up better. If you’ve got the skinny ones, drop the time by a minute. Check one by picking it up mid-spear – it should droop slightly but still have some snap when you bend it.

That’s it. You’ll get firm, smoky asparagus that still has texture. Nobody wants mushy grass.
