Shrimp overcook in about 30 seconds. The window between raw and rubber is tiny. So start with a screaming hot grill (500°F+), clean grates, and oil the skewers and the shrimp. Metal skewers are best for even heat and no soaking. If using wood, soak them in water for 30 minutes, but they’ll still catch fire if you leave them on the grill too long.
Thread the shrimp tightly so they form a flat surface – that helps them cook evenly and makes flipping easier. When you put them on the grill, don’t touch them. Let them sear for 2-3 minutes. They’ll release from the grates when they’re ready. Flip, cook another 2 minutes, and pull them the second they turn opaque and curl slightly.
Sticking happens when the grill isn’t hot enough or the shrimp are wet. Pat them dry with paper towels before oiling. And don’t crowd the skewers – leave space for the heat to circulate.
Shrimp is the fastest thing you’ll grill. Respect the timer, and you’ll eat well.
