Ice pack goes on top of the food

The trick to keeping chocolate and cheese from melting is putting the ice pack on top of your lunch, not under it. Cold air sinks, so an ice pack under the food only chills what’s touching it. Put it on top and cold air falls over everything like a blanket.

Freeze the chocolate bar itself too. A frozen bar takes forever to melt in an insulated bag, and it tastes completely normal by lunch. Same idea works with a small bottle of water—it’s a second ice pack that becomes a drink.

Wrap the chocolate and cheese in foil or baking paper before you pack them. Cold food in warm humid air creates condensation, and moisture is what causes chocolate bloom (that white film) and sweaty, sad cheese.

Keep the bag in the shade, don’t leave it in a hot car, and don’t open it more than you have to. Insulated bag, ice on top, chocolate pre-frozen, and you’re done.
