Keep produce dry in the cooler.
The trick is to prevent direct contact with melted ice water and manage humidity inside the bag or bin.
Start by bagging everything in zip-top bags with the air pressed out. Add a dry paper towel inside each bag—it absorbs condensation before it turns into a soggy puddle at the bottom. For leafy greens, wrap them in a slightly damp paper towel first, then put them in a bag. The towel holds moisture without letting the leaves sit in water.
If you’re using a big cooler, keep produce in a separate container or a mesh bag that’s off the floor of the cooler. That way, any melted ice drains below. Change the towel every day if you’re on a long trip.
Most people drown their produce because they throw it in loose. A little separation goes a long way.
