The secret to a raw vegan salad jar that stays crisp is keeping the leaves away from anything wet until you’re ready to eat.

Wilt happens because moisture breaks down plant cell walls. The dressing is not your friend here — it’s a wilt accelerant. So flip the order: dressing goes in the bottom, then a dense layer of raw stuff like shredded cabbage, carrots, chickpeas, or avocado. That barrier stops the dressing from seeping up. Then pile the leafy greens on top, right under the lid.

Also: dry your greens after washing. Not “kind of dry” — properly dry. A salad spinner or towel-dry is what separates a crisp endive from a sad, floppy one. Wet greens will wilt even if the dressing never touches them.

At lunch, shake the jar hard enough to coat everything. If you want to get fancy, flip it upside down a minute before you shake so the dressing runs over the greens.
