Keep the Wet Stuff Away From the Shell

The way to keep lettuce wraps and tacos from going soggy is to keep the wet filling and the shell apart until you’re ready to eat.

That’s really it. Pack the seasoned meat, slaw, salsa, or whatever in a separate small container, and put the lettuce leaves or taco shells in another. If you have a bento box with dividers, great. If not, use a couple of small food storage cups and a larger container. Assemble at your desk, not in the kitchen.

For lettuce specifically, you want sturdy leaves like romaine or butter lettuce, and pack them with a dry paper towel to absorb any condensation. That towel is your secret weapon. For hard taco shells, wrap them in foil or a cloth napkin so they stay crisp.

If you’re doing soft tortillas, a light toast before packing helps create a moisture barrier. Then keep the filling separate just like with hard shells. Soggy tacos aren’t a time problem, they’re a contact problem.

Assemble at your desk, not in the kitchen.
