Lemon Water for Apples, Rubber Bands for Bananas
Lemon water stops apple slices from browning, and a rubber band on a cut banana keeps it fresh if you leave the peel on.
For apples, the fix is easy: mix a little lemon juice into a bowl of water and toss the slices for a minute or two. The citric acid slows down oxidation, which is what turns them brown. Don’t soak them forever or they’ll taste tangy — just a quick dip, drain, and pack them.
For bananas, the rubber band trick works best on a cut banana that still has its peel. Cut it crosswise, then wrap a rubber band around the cut end so the peel hugs the flesh again. That blocks oxygen where the banana is most exposed. If you’ve already peeled the whole thing, lemon water works there too, just like apples.
And a bonus: wrap a rubber band around the banana stem itself before you leave for work. It traps ethylene gas and slows ripening, so your banana starts the morning yellower.
