Oil your pasta or it'll turn into a brick

Leftover pasta goes mushy for two reasons — steam and sauce — and you fix both with oil and a little separation.

Cook the noodles slightly underdone (about 1-2 minutes less than the package says) if you know they’re heading for a lunchbox. They’ll finish cooking when you reheat, and they won’t turn to paste.

After draining, rinse them in cold water to stop the cooking and wash off excess starch. Then drizzle with a bit of oil — olive oil for Italian pasta, sesame or peanut oil for Asian noodles — and toss. That thin coating is what keeps each strand separate instead of fusing into a solid chunk.

The bigger trick: store the sauce in a separate small container, not poured over the noodles. If sauce sits on pasta for hours, the noodles soak it up and turn mushy. When you’re ready to eat, reheat the noodles with a splash of water (cover them in the microwave for about 60-90 seconds), then stir the sauce in fresh.

If it’s a cold noodle salad, skip the reheating entirely and just eat it chilled — that’s the easiest route. Toss it in the dressing right before you leave, or pack the dressing separately and add it at lunch.

Thirty seconds of oil and separation saves you from a sad, sticky lunch. Worth it.
