Overnight in the Fridge Is the Safest Bet

A typical frozen meal prep container will thaw in the fridge overnight, usually 8 to 12 hours. If your lunch box is bigger or packed dense — think stews, thick casseroles, or anything with a lot of chicken breast — give it closer to 24 hours.

The safest way is exactly what you’re thinking: thaw in the fridge, not on the counter. Countertop thawing leaves the outside at room temperature for too long, which is basically a welcome mat for bacteria. The fridge keeps everything below 40°F while the ice melts, so no risk.

One tip: put the container on a plate or tray. Condensation drips, and nobody wants lunch juice all over the shelf.

If you forgot to move it the night before, don’t panic — cook it from frozen directly. It’ll take longer, and the texture might not be as good, but it’s safe. The fridge thaw is the boring, reliable choice. Future You deserves it.
