Par-cook the bacon first

Yes, that’s the trick.

If you wrap raw bacon around a cream-cheese-stuffed jalapeño and throw it on the grill, you get flabby bacon and a burned pepper. The bacon takes too long to render, and by the time it’s crispy, the pepper is mush.

So: microwave your bacon strips for about a minute, or pan-fry them until they’re just starting to brown but still flexible. Let them cool. Then wrap.

For the filling: cream cheese is non-negotiable. Mix in shredded cheddar, garlic powder, a little salt. Some people add chopped shrimp or sausage—fine, but don’t overthink it.

Cut the jalapeños in half lengthwise, scrape out the ribs and seeds. Fill each half, wrap with a par-cooked bacon strip, secure with a toothpick. Grill over indirect medium heat (around 350°F) for 15–20 minutes, flipping once if you want even browning. The bacon will finish crisping without burning the pepper.

Skip the direct flame. Indirect heat is the move.
