Pick three things and repeat
Meal prepping a week of lunches in one afternoon comes down to picking two or three base components and repeating them — not cooking five different meals.
Choose one protein, one carb, and one vegetable that all cook the same way. Sheet pan chicken thighs, a big pot of rice, and roasted broccoli will get you 90% of the way there. Cook those three things in bulk, and you’ve done the actual work. The whole cooking part takes about an hour if you run the oven and stovetop at the same time.
The second half is assembly. While things cool, chop some raw stuff for crunch — cucumbers, bell peppers, cherry tomatoes. Pack each box with a portion of the protein, the carb, and the roasted veg, then add the raw stuff on the side. The raw stuff keeps the meal from feeling like a sad cafeteria tray. If you want variety, change the sauce, not the ingredients. Five different sauces on five identical boxes feels like five different meals.
One rule: don’t let wet things touch dry things before they go in the fridge. Keep dressing in a little container or just drizzle it on in the morning. Soggy meal prep is the #1 reason people quit by Wednesday.
Airtight glass containers are worth it here. Plastic works but holds smells and stains, and glass reheats better anyway. There’s no fancy system required.
