Pineapple caramelizes fast on high heat

Pretty simple: high heat, a little sugar or honey, and about 4–6 minutes total.

Cut the pineapple into rings or spears, about ½‑inch thick. Pat them dry—moisture is the enemy of caramelization. If you want extra sweetness and deeper color, brush both sides with honey, brown sugar, or even maple syrup. Not strictly necessary if your pineapple is ripe, but it helps.

Get your grill screaming hot, around 400–450°F. Place the pineapple directly on the grates. Cook 2–3 minutes per side, until you see dark grill marks and the edges start to caramelize. Don’t walk away—pineapple’s natural sugars can go from golden to burnt fast.

Serve warm with ice cream, whipped cream, or just as-is. It’s one of those desserts that looks like you tried, but you really didn’t.
