Here’s the physics in plain terms: metal conducts heat well and has a lot of thermal mass. When you chill a steel box overnight, it holds that cold and steadily absorbs heat from the food inside. Plastic has lower heat capacity, so it warms up fast and doesn’t help keep anything cold — it’s basically just a barrier.

The catch is that bare steel is a terrible insulator. If you stick a room-temperature steel box on a warm desk, it’ll absorb heat from the air just as eagerly as it absorbs heat from your sandwich. So the “keep it cold” superpower only kicks in when the box itself starts cold.

Real-world takeaway: steel container + ice pack (or overnight fridge chill) = your food stays cold for hours. Plastic tub in a brown bag will be lukewarm by noon.
