The secret isn’t some mystical 20-layer seasoning. It’s heat management. Heat the pan on medium-low for a solid 3–5 minutes. You want it evenly hot. Drop a little water on it and if it sizzles and evaporates immediately, you’re ready. Then add your fat—butter works best because it adds both lubrication and flavor. Swirl it around. Crack the egg in and leave it alone for about 30 seconds. The egg will release naturally once the bottom sets. Use a thin metal spatula, not a flimsy plastic one.
A well-seasoned pan helps, but even a brand new Lodge will work if you do the preheat and fat right. The problem people have is either too high heat (burns the butter and sticks) or rushing the preheat.
This is not where you save 30 seconds. Take the time to preheat properly and you’ll get slidey eggs every time.
