Preheat the basket and keep things moving

The secret to a good grill basket is treating it like a wok, not a baking sheet.

Most people just throw food in a cold basket, plop it on the grill, and wonder why everything sticks or turns into mush. The basket itself needs to be hot before anything goes in. Put it on the grill for a couple minutes while the grill preheats, then give it a quick spray or brush of oil. That’s your non-stick insurance.

Then don’t overcrowd it. A single layer, spaced out. Small foods like shrimp, cherry tomatoes, mushrooms, or thin asparagus need room for heat to circulate. If you pile them up, they steam instead of searing. And you want that char, right?

Shake or toss the basket every few minutes. Use tongs or just a good wrist flick. The goal is even browning, not letting anything sit in its own juices. For things that stick easily (like delicate fish or scallops), lightly oil the food itself too, not just the basket.

One more thing: don’t walk away. A grill basket burns fast because small foods cook fast. Two minutes can be the difference between gorgeous and charcoal.
