Pull chicken breasts at 150°F
Aim for an internal temperature of 150-155°F, not the standard 165°F.
I know the USDA says 165°F is the safe zone, but here’s the thing: that temperature is for instant kill of bacteria. If you hold chicken at 150°F for just a few minutes (which happens naturally during resting), it’s just as safe. The difference? At 165°F, the breast is already squeezing out moisture. At 150°F, it’s still juicy.
So take it off the grill when the thickest part reads around 150°F. Let it rest for 5-10 minutes. The carryover heat will push it to about 155-158°F, and you’ve got a tender, not-dry piece of meat. Set your grill to medium-high (around 375-425°F) and cook about 6-8 minutes per side, depending on thickness. Use a good instant-read thermometer – don’t guess.
