Rice stays fluffy if you cool it fast and keep it dry

The trick to rice that doesn’t clump in a bento is to cool it completely and cut the moisture before you pack it.

Rice gets sticky and clumpy because of starch. If you pack it warm and shut the lid, steam condenses right back into the rice and turns it into a brick. So the fix is all about getting the rice to room temperature without trapping that steam.

Cook it like you normally do, but rinse the rice well first to wash off surface starch. When it’s done, spread it out on a plate or a tray and let it sit for ten minutes. Fluff it with a fork or rice paddle so the steam escapes. You can mix in a drop of sesame oil or rice vinegar — just enough to coat the grains. That keeps them separate.

Then pack the rice in its own compartment, away from anything wet or steaming. If your bento has tight containers, that’s fine as long as the rice is fully cooled before sealing. A small divider or a piece of lettuce works too. The goal is to keep moisture off until you’re ready to eat.
