Salt water is the best lemon-free trick for cut apples

The easiest way to keep cut apples from browning without lemon juice is to soak them in a weak salt-water solution before you pack them.

Why it works: lemon juice slows down the enzyme that turns apples brown, and salt does the same thing by deactivating that enzyme. It takes almost no effort. Mix half a teaspoon of salt into a cup of water, soak the apple slices for about five minutes, rinse them off, and pack them. They won’t taste salty, and they’ll stay pale and crisp for hours. Honey water works too, if you’d rather go sweet: two tablespoons of honey in a cup of water, same soak and rinse.

If you don’t feel like soaking, your best container hack is just keeping the sliced apples fully covered in a little water or apple juice inside an airtight jar. Browning needs air, so no air means no brown. Any tight-sealing bento box or small glass jar does this; you don’t need a special “fruit saver” product.

And the laziest trick that always works: pack a whole apple and slice it at lunch. It’s the only way to get zero oxidation, and it’s a pretty good look for people who cut fruit at the table.
