If you want a lunch container that’s food-grade silicone and folds flat when empty, your two main options are Stasher bags and Stojo’s collapsible containers.

They work great as sandwich bags, snack bags, or even a bento-style option if you buy a few sizes. The downside is they’re bags, not boxes. If you want something that holds its shape while you eat, look elsewhere.

That “elsewhere” is Stojo. They make collapsible bowls and food containers with lids that squish down flat when not in use. Also food-grade silicone, also fridge/freezer/microwave safe, and they feel more like a proper lunch box — you can eat out of them without wrestling a bag open.
