The dressing already mixed in is your problem

If the dressing is already mixed in, the greens are going to wilt, and no lunch box hack fully fixes that.

The acid and salt in dressing pull water out of the leaves and break down cell walls. That’s wilting. Once it starts, it doesn’t stop.

You can slow it down. Use sturdy greens like kale, romaine, or cabbage instead of spring mix. Pat the greens completely dry before adding anything—wet greens get soggy faster. And use less dressing than you think you need. Just enough to barely coat.

But if you want a make-ahead lunch salad, the real fix is to keep the dressing separate until you eat. Dressing at the bottom of a jar, greens on top, shake when ready. It takes five extra seconds and keeps the crunch.

A soggy salad is not where you save time.
