The water test is the only test you need

The water test. Run the pan under the tap — if the water beads up and skitters around like mercury, it’s properly seasoned. If it flattens out or sticks, you need another round in the oven.

People get obsessed with color, but it’s a terrible indicator. A dark, glossy finish looks seasoned, but you can get that from too much oil that’s still tacky. Meanwhile, a well-seasoned pan can look splotchy or even slightly dull — especially if you’re using a light-colored oil like grapeseed. Visual cues lie.

The water trick is dead simple and honest. Water beads = the polymerized oil is smooth, hydrophobic, and doing its job. Water spreads = the surface is still too porous or has gummy residue. A few drops from your fingertip tell you more than staring at it under a light ever will.

Don’t overthink it. If water beads, cook. If not, season it again and move on.
