Thick cast iron is for steady heat, not quick changes
It’s a trade-off. Thicker cast iron holds more thermal energy, so it stays hot longer when you add cold food—great for searing. But it takes forever to heat up and even longer to cool down, so adjusting the burner feels like steering a cruise ship.
Cast iron already has low thermal conductivity, meaning heat doesn’t spread through it quickly. Make it thicker and you’ve got a massive heat battery. Drop a steak in a thick pan and the temperature barely drops. That’s why heavy Lodge skillets are king for crusty sears. But try to dial back the heat to save a sauce and you’ll be waiting two minutes for the pan to even notice.
Thinner cast iron—like vintage pans or some modern lightweight ones—responds faster. You can go from medium to low and see a change in 30 seconds. The downside: add a cold chicken thigh and the pan might drop 50 degrees, taking a while to climb back. Fine for eggs, annoying for steak.
Most people don’t need to overthink this. Standard 3-4mm thick pans handle 90% of cooking well. If you’re constantly adjusting temps for delicate stuff, get carbon steel or stainless. If you want to sear and braise, go thick and learn to work with the lag.
Thick iron rewards patience, not precision.
