Start with pasta that’s just al dente—overcooked spaghetti gets sticky and fragile. Drain it, but keep a little olive oil or sauce on the noodles so they don’t fuse into one solid clump. Grab a fork, spear a small pile, and spin it like you’re eating it in public. You want a tight, even coil.

To transfer, use a second fork or your fingertip to gently push the nest off the tines onto the plate. If it’s fighting you, don’t yank—the strands will snap. Instead
