Once the rust is gone, wash the grate with dish soap and water. Yes, soap. That’s fine this one time because you’re starting over. Dry it completely—like, immediately, or it’ll flash rust. Then rub it down with a high-smoke-point oil (canola, grapeseed, or flax) and put it on a hot grill for 30-60 minutes to season it. Repeat the oil-and-heat step once or twice for good measure.
