Wood cutting boards need oil, not bleach.

You clean your wooden cutting board with hot water and a scrub brush, dry it immediately, and oil it once a month with food-grade mineral oil.

For picnic specifically: after prepping food outside, wipe off any bits with a damp cloth or rinse with hot water back home. Don’t soak it—wood absorbs water, warps, and cracks. If you handled raw meat, sanitize with a spray of white vinegar or hydrogen peroxide (not bleach), let it sit a minute, then rinse and dry.

The oil is what keeps the board alive. Without it, the wood dries out, splits, and becomes a bacteria hotel. Use mineral oil (butcher block oil), not olive or vegetable oil—those go rancid. Apply a generous coat, let it soak in overnight, wipe off the excess.

If the board starts smelling funky or feels rough, give it a scrub with coarse salt and half a lemon. That’s it.

A well-oiled board is basically indestructible.
